Words, words, words



Less than a month ago I was worried about how far behind baby was in her language development. Now..WOW!!! Her vocabulary has expanded tremendously and she mimics/imitates so much. She has doubled the words she says in such a short time. It is amazing when you realize the changes that happen in a mere 30 days.

Currently she says:

Cole (for Nicole her babysitter)

Skitz (our cat) you can guess what this sounds like when she says it

Poop-unfortunately not referring to her bodily functions but to the cat's

Boob- she learned this word over breast...go figure

Uh-Oh

She also can spontaneously moo, neigh, bark, and meow when shown pictures of critters.
I am looking forward to watching what she accomplishes next.

Recipes

So, I was checking out the blogs I subscribe to the other day and I noticed a give away on one where you "registered" for an apron by leaving a favorite quick and easy recipe. I found two that sounded interesting and gave it a shot. One was for chicken squares, the other calzones. Well, the chicken squares were not so much for me but the hubby liked them and they are pretty! The calzones were great. I added peppers and onions and used pizza sauce instead of spaghetti sauce.
I am definitely not a complicated recipe kinda person and these were manageable-the calzone more so than the chicken squares. Anyways-take a look!!

25 things I LOVE

In honor of Valentine's Day, thought I would do a post of things I love. Of course, these are in no particular order.



1) Walking on the beach and all the activities you can do while walking-picking up seashells, watching the birds, listening to the waves, etc
2) Playing with my little one
3) Watching storms from INSIDE
4) Being alone in nature
5) Fall in the mountains
6) Holding hands with my little one
7) A clean house-not that I experience it very often
8) Jimmy Buffet music on a sunny day
9) Craft projects that come out just right
10) My hubby
11) When the hubby details my car
12) Fresh, home grown tomatoes on white bread-that's the only time I eat white bread
13) Catching fish, well not hard head catfish but most fish
14) Getting packages in the mail
15) Shoes, shoes, shoes!!
16) old medical/health related books-I am fascinated by what was accepted as science back then
17) All things Irish (except Notre Dame football)
18) Cutesy office supplies- I'm a sucker for frou frou pens, shaped note pads, colored paperclips
19) Watching dolphins, preferably up close
20) Traveling
21) Fire, as in campfires or fireplaces or fire pits-not in the arson kinda way
22) when something I planted from seed blooms or has veggies on it
23) SEASHELLS-you can never have too many
24) My parents-they have done so much for me and my hubby
25) Hot coffee on a cold morning, enjoyed outside in the mountain air

Crockpot

I LOVE my crockpot!! I made rosemary chicken the other night and it was super easy and quite tasty and did I say easy?
You need:
Boneless, skinless chicken breasts or thighs-I use breasts b/c that's all the hubby will eat
Cream of chicken soup
Rosemary-I use fresh b/c I have a HUGE plant
Salt and Pepper to taste

I put in the chicken, add the soup to cover the chicken, add the rosemary and seasonings...that's it. There are no exact amounts-I personally like lots of sauce so I use more soup than really needed, you can also thin the soup w/ water.

Cook on low for 6 hours or high for 4 hours.

Serve over rice or noodles or as I did-leftover dressing from the freezer!

Growing up

My little one will soon be 18 months old. WOW!! In some ways she is so BIG and others, still such a BABY. I know I am going to miss the baby stage so much. In the past month she has started alot of new things.
Facts about baby:
- sometimes puts herself back to sleep (self soothes)
- lets us know when she wants a bottle
- Bottles are getting fewer
- takes her diaper off and runs!
- learning animal sounds and can imitate a bark, neigh, meow and oink.
- able to name some and point to most body parts
- spending less time in mommy and daddy's bed
- still snatches her hand away and tries to run off when in public
- NO FEAR!!!
- climbs-anything
- thinks getting on the coffee table and standing there is fun
- Cat food and dog food are still options for snacks and toys
- Anyone's cups are much more interesting than hers
- Remotes and phones are fun to play with
- already likes TV too much
- Baths are still fun
- The bathroom is not a private place-she MUST be a spectator if at all possible
- On occasions she thinks SLEEP is for SISSIES
- Graceful is something she is not
- loves our critters
- Tough girl
- loves SHOES
- continues to be strong willed
- is affectionate-she hugs and kisses all the time (the kitties too)
- likes to be around other children
- consumes most of our time
- has never spent a night away from me
- lights up when she sees her sisters
- likes to clear everything off the table by throwing it on the floor
- unfolds clothing as I fold
- smushes her food if she is no longer very hungry
- eats most foods including lima beans (yuck), kiwi, mango, tomatoes, chicken curry and spicy stuff
- is ADORED by her mom and dad
